Anyone who appreciates a good bacon-filled dinner will be obsessed with this Blackstone Cheesy Bacon Chicken. It’s an absolute favorite in my house—my husband requests it constantly!

Why I Love This
This recipe is an effortless crowd-pleaser. Packed with plenty of protein and fiber, it delivers incredible flavor while staying super hearty. Even better, you can do all the chop work beforehand, making griddle time quick and stress-free.
Variations
Feel free to swap out the chicken for beef if you prefer a red meat option. Make sure to choose a tender cut like a New York strip, ribeye, or T-bone for the best results.
Pairings
Because the melted cheese and bacon make this meal so rich, pairing it with a fresh green side balances everything out.
I paired it with garlic bacon Brussels sprouts in the demonstration video, but steamed broccoli, green beans, or a crisp garden salad work wonderfully too.
Leftovers
Store any extra portions in the fridge—they can easily be transformed into brand-new meals:
- Morning Scramble: Warm up the leftover mix on the stove, pour in some whipped eggs, and scramble everything together for an amazing breakfast.
- Griddle Sandwiches: Heat up the mixture using a skillet or microwave, then heap it onto a toasted roll for a satisfying lunch.
Servings
This yields 4 servings, but you can adjust the quantities to fit your group size. When feeding a bigger group, having all your ingredients chopped and ready to go keeps the cooking smooth. Even on a compact 17-inch Blackstone griddle, you can fit a triple batch as long as side dishes are cooked separately.

Recipe

- 1 tablespoon olive oil
- 1 1/2 pounds boneless skinless chicken breasts cubed into bite sized pieces
- 1/2 pound bacon cut into small cubes
- 2 medium Yukon gold potatoes washed and diced into small cubes
- 1 teaspoon garlic salt
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 2 cups shredded cheddar cheese
-
Set your Blackstone griddle to medium heat.
-
Drizzle oil onto one side of the flat top and toss in the diced potatoes. Let them cook for roughly 15 minutes, flipping occasionally to ensure even cooking.
-
Spread the chopped bacon pieces across the opposite side of the cooktop and crisp them up until golden brown.
-
Leave the rendered bacon grease on the griddle, place the cubed chicken directly into the fat, and sprinkle with seasonings. Cook for around 15 minutes until fully done.
-
Mix the potatoes, crispy bacon, and cooked chicken together, blanket everything with shredded cheddar, and close the griddle dome until melted. Serve immediately while hot!
